Recently there has been a rediscovery of some ancient crops due to increased consumer demands for healthier diet with medicinal and therapeutic effects. One such crop is pseudocereal Amaranthus sp., which nutritionally more favourable than many widespread kinds cereal meets most the requirements modern diets. The incorporation amaranth species in food formulations would expand assortment products present on market. high nutritional quality potential functionality amaranth-based have subject extensive scientific research. This study aims at reviewing currently available data application grains industry manufacturing focuses functionalities these products, providing an overview current value chain.
